The cooler weather has well and truly kicked in, meaning the need for comfort food is high. This simple and delicious yoghurt berry bake is the perfect addition to your winter baking repertoire.
Prep: 10 min / Cook: 20 min / Serves 4-6
4 eggs, beaten
250g Camperdown Dairy Natural Greek Yoghurt
1 teaspoon vanilla extract
3 teaspoons cornflour
250g mixed raspberries and blueberries (defrosted if frozen)
Icing sugar, to dust
Preheat the oven to 170°C.
Place the eggs, honey, yoghurt, vanilla extract and cornflour in a bowl, then whisk together until smooth.
Place half the berries in the base of a 23cm baking dish and top with the yoghurt mixture.
Sprinkle the remaining berries over the top, then bake in the oven for 20 minutes.
Dust with icing sugar before serving warm or hot.
